Tomato Pasta Bake

 

A fantastic speedy weekday bake. Bursting cherry tomatoes, and melted creamy mozzarella. Torn basil adds a sweet herby fragrance. Warm and comforting on these chilly evenings.
 
Ingredients
 
150g Cherry Tomatoes
400g tin of Chopped Tomatoes
1 Medium Onion
4 Garlic Cloves
250g of Pasta
Handful of Fresh Basil
Sprig of Thyme
Salt & Pepper
Ball of Mozzarella
 
Method
 
Place the pasta in boiling water with a pinch of salt. Cook until Al-dente then drain and place to one side.
 
Finely dice the onion and garlic. Heat a sauté pan with 1tbsp of oil, then sauté the onions and garlic until softened. Pour in the tinned tomatoes with a pinch of sugar . Add the thyme, torn basil and salt and pepper to taste. Reduce the sauce by half, then toss the pasta and sauce together.
 
Place in a oven proof dish tear the mozzarella and scatter other the top. Place in a 180C preheated oven for 15-20 minutes or until golden and bubbly.
