Strawberry, Balsamic & Parmesan Salad



Putting strawberries into a salad may sound like a odd thing to do. But it surprisingly works really well. Sweet strawberries against tangy acidic balsamic vinegar is a delicious combination. Served with shavings of parmesan on a bed of summer leaves.
Simple salad for one or side dish for two.
Reduce 3tbsp of balsamic vinegar in a small saucepan, along with a generous grinding of black pepper. Reduce until a thickened syrup has been achieved.
Arrange the bed of salad leaves on a plate, then top with halved strawberries. Drizzle over the balsamic reduction and grate generous shavings of parmesan over the top.
