Rich, Silky Chocolate Mousse



A rich silky chocolate mousse, truly satisfying with a shot of espresso to enhance the chocolatey flavour.
Serves 2
Ingredients
200g of Chocolate
20ml of fresh strong Coffee
40g Caster Sugar
3 Large Eggs
Cocoa Powder
Tiny Knob of Unsalted Butter
Method
Melt the chocolate in a double boiler over a low heat, with the espresso and butter. Once melted leave to cool for 3-4 minutes.
Separate the eggs into whites and yolks. 
Once the chocolate has cooled slightly add the egg yolks and combine.
Add the egg whites to a mixer, beat until soft peaks form. Add the sugar in thirds beating until white and glossy. 
Being quick but gentle, fold in the egg whites to the chocolate, being very careful not to lose much air.
Once folded in pour into small cups or ramekins. refrigerate for 2 hours to set. 
Dust with cocoa powder, scatter over chocolate shavings. Serve with whipped cream.
