Quick and simply delicious, a recipe for when you just fancy a comforting night in. Snuggled up next to a cosy fire. A lovely combination with Polish garlic sausage, creamy cheese and leek sauce.
Serves 2
Ingredients
1 Polish Garlic Sausage
200g Pasta
2 Garlic Cloves
1 Shallot
1/2 a Leek
3 Sprigs of Fresh Thyme
Large Knob of Butter
1tbsp Plain Flour
100g of Grated Cheese like Parmesan, Cheddar and Gruyere
Grating of extra Parmesan for the top
300-400ml of Milk
Method
Slice the sausage, chop the shallot, garlic and leek.
Heat a little oil in a oven proof sauté pan. Sauté the sausage, shallot, garlic and leek until softened.
Make a rue by adding the butter, once melted add the flour stirring for around a minute or so. Pour in milk little by little stirring all the time until a thickened glossy sauce has formed.
Remove from the heat, add the grated cheese and stir in until melted.
Place the pasta in a saucepan of boiling water. Cook until al-dente.
Add the pasta to the cheesy mix and stir to coat. Grate over a little parmesan then place under a hot grill until bubbly and golden.
