Blondes have all the fun Blondies



Blondie's are a decadent white chocolate brownie. The white chocolate imparts a sweet creamy vanilla taste. They are fudgy gooey and just as satisfying as regular brownies. The milk chocolate chunks are spread throughout giving little bursts of cocoa along the way.   

Makes 16

Ingredients

200g White Chocolate
140g Plain Flour
185g Unsalted Butter
280g Golden Caster Sugar
3 Large Eggs
100g Milk Chocolate Chopped
1tsp Vanilla Bean Paste

Method

Preheat the oven to 180C. Grease and line a 9x9inch square baking pan.

To a double boiler add 200g of white chocolate and the butter. Leave until melted, stir occasionally. Once removed from the heat allow to cool slightly, if the chocolate and butter has separated don't panic.
Meanwhile to a freestanding mixer add the sugar, eggs and vanilla bean paste. Whisk until pale white and fluffy, around 4-6 minutes or so.
Fold the chocolate into the whisked eggs and sugar. Then carefully fold in the flour. Be careful not to loose to much volume.
Pour into the baking pan spreading evenly. Scatter the chopped milk chocolate over the top, then place in the oven for 25-30 minutes. Allow to cool completely before cutting into squares.
