Chicken, Bacon & Avocado Baguette




Nothing beats a fresh crusty baguette. Filled with griddled tender chicken breast. Crisp smoked bacon and creamy hass avocado. All layered on peppery rocket and seasonal leaves. Simply served with sweet roasted pepper and tomatoes.
 
Place the bacon under a medium to high grill until crisp. Remove and place to one side.
 
Meanwhile heat a griddle until fiercely hot, griddle the chicken breasts for 4-6 minutes a side. Once cooked through wrap in foil and rest for 5-10 minutes.
 
Cut the fresh baguette. Spread over a thick layer of mayonnaise and top with the rocket and seasonal leaves.
 
Slice the chicken breast and place on top of the leaves. Place the bacon on top of the chicken. Then prepare the avocado and slice in thick slices. place on top of the bacon. Scatter with some chopped coriander and devour.
