Asian Chicken Noodle Salad



This is a wonderful warm salad of chargrilled chicken. Winter salad leaves which have a crisp crunch. Noodles to add body and absorb a far eastern inspired dressing. This would be a perfect dish to make for a special valentines day meal. Its simple and delicious.
Place a griddle on the hob, heat until fiercely hot. Place the chicken breasts on the griddle. Once cooked half way up the breasts, turn them over and repeat until thoroughly cooked. Remove from the griddle, cover and allow to rest. 
Meanwhile place cherry tomatoes on a baking sheet with a drizzle of oil, pinch of salt and pepper. Roughly sprinkle 1/2tbsp of dried oregano over and place in a hot oven until they are soft and starting to burst. 
To a bowl add the juice of 1 lemon, 2tsp of Kikkoman soy sauce, 2tbsp of hoisin sauce and a big pinch of chilli flakes. Also chop in a handful of fresh coriander. Stir to combine and leave to one side. 
Pop the noodles on the boil adding a 1/2tsp of Kikkoman soy sauce to the water. This will flavour the noodles during cooking. Drain and place to one side.
Place the noodles in a bowl adding a little dressing, toss the noodles to coat. Add the mixed winter leaves to the noodles and toss again.
Arrange the dressed noodles and leaves on a plate, place over the cherry tomatoes. Slice the chicken breasts and place over the top, spooning a little dressing over the chicken. Finish with some freshly chopped coriander.
