Brownies are a great treat for rainy days and are really simple and easy to make. This is a fantastic Valentines treat for a loved one to come home to. My brownies are packed with dark chocolate chunks, which gives the taste buds a sensationally seductive treat of bitterness. Counteracted by the sweet chewy gooeyness of the brownie.

Ingredients
200g Dark Chocolate 70% Cocoa
185g Unsalted Butter
3 Large Eggs
280g Caster Sugar
100g Plain Flour
60g Cocoa Powder
1tsp Vanilla Extract
100g Chopped Dark Chocolate 70% Cocoa
Method
Preheat the oven to 180C. Grease and line the base of a 9x9inch baking pan.
To a double boiler add 200g of chocolate and the butter. Leave until melted, stir occasionally. Once removed from the heat allow to cool slightly.
Meanwhile to a freestanding mixer add the sugar, eggs and vanilla extract. Whisk until pale white and fluffy, around 4-6 minutes or so.
Fold the chocolate into the whisked eggs and sugar. Then carefully fold in the flour and cocoa powder. Be careful not to loose to much volume.
Pour into the baking pan spreading evenly. Scatter the chopped chocolate over the top, then place in the oven for 30-40 minutes. Remove once there is no slight wobbles and the top is shiny. Allow to cool completely before cutting into squares.
