This is one of our store cupboard staples. We pretty much add chilli flakes to everything. This is a great way to cut the cost on store bought chilli imitations which are of one variety and really quite boring. We find using a mixture of chillies adds depth of flavour, different levels of heat, smells and aromas. Buying fresh chillies to dry at home is relatively easy and worth trying.
280g variety of fresh chillies will be needed. Start by piercing them all over. Then place on a baking sheet, pop in a low oven around 30C-40C overnight. Remove from the oven, once dried you will notice a transparent skin and if shaken you will here the seeds rattle. 100g of mixed chillies like de arbol, Morita add depth and a smokey rub smell.
De-stalk the chillies then add to coffee grinder. Coarsely grind the chillies and store in an airtight container to keep fresh until use.
