Herby Sweet Potatoes



Sweet Potatoes rubbed with fresh herbs to permeate the skins during cooking. Once baked mix the creamy insides with crème fraiche, spring onion and cheese for a blissful hand held meal. Works well as a coolant for the hot and spicy chicken post. Perfect for summertime eating.
For each Sweet Potato
Ingredients
2 Bay Leaves
2 Sprigs of Thyme
2 Sprigs of Rosemary
1tbsp of Oil
Pinch of Salt & Pepper
Method
Preheat the oven to 200C. 
Make a foil parcel to wrap the sweet potato in. Place in the sweet potato along with the rosemary, thyme, bay, oil, salt and pepper. Massage the potato with oil and herb mix to release the oils, these will permeate skin during cooking. Place in the oven for 45-55 minutes until soft and tender. 
Remove from the oven and allow to cool slightly. Slice down the middle and dollop on 2tbsp of crème fraiche, a handful of grated cheddar. Sprinkle over spring onion and fresh flat leaved parsley. Enjoy eating straight from the foil wrapper.
