A refreshing and simple cordial to make, that tastes just as good as the leading brand. This thick and glossy cordial is great for using in pitchers or if you just fancy a cooling drink on these hot summer days Blackcurrants are naturally packed full of vitamin C and have been grown and harvested the UK for centuries.
Makes 1x1000ml/1tr Bottle
Ingredients
700g Blackcurrants
500g Sugar
Juice and Zest of 1 Lemon
250ml/25cl of Water
Equipment
2 500ml/50cl Bottles
Medium Saucepan
Plastic Jug
Sieve
Muslin/Cheesecloth
Method
Place the blackcurrants, water, zest and juice of the lemon in the saucepan. Bring to a boil allowing the berries to burst. Add the sugar little by little ensuring it has fully dissolved before adding the next batch. Bring to a boil once again then simmer for 5-10 minutes skimming off any foam that sits on the top.
Allow to cool slightly before straining through a muslin lined sieve into a jug. Then simply pour the syrup into hot sterilized bottles, seal and date them.
Let the bottles cool completely. Store in the fridge once opened.
