Apricots in Amaretto Syrup



New in season apricots blushing and perfectly ripe this time of year, preserved in a robust amaretto syrup. Simply delicious served over ice cream or why not try using them to make a summer trifle.


Makes 1 1.5lt Jar

Ingredients

900g Fresh Apricots
270g Sugar
500ml/50cl Water
500ml/50cl Amaretto

Method

Heat the water to a boil in a medium sized saucepan, add the sugar and stir to dissolve.
Pour in the amaretto liqueur stiring to combine and heat through.    

Meanwhile halve the apricots removing the stones, then place them in a sterilized 1.5lt kilner jar. Pour the syrup over the apricots to cover then seal. 

Will keep for around 1 month.
