Currently around the Great Limber pond there are cherries in abundance. So this is a great time of year to get ahead making a start on the winter tipples. Cherry brandy is classically made with black cherries, but seeing as we have three different varieties ours is a mixture. Preserving is a great way to enjoy your favorite fruit/veg even if the season has ended.
Makes 1 1000ml/1lt Jar
Ingredients
450g/1lb Freshly Picked Cherries
700ml/70cl Brandy
1tbsp Sugar
1 Cinnamon Stick
Equipment
1lt Kilner Jar
Method
Sterilize the 1lt kilner jar and de-stalk the cherries.
Place the cherries, cinnamon stick and sugar into the jar. Pour the brandy into the jar to cover the cherries. Seal the jar and leave for 2 months shake every day for the first week then every now and again.
