Blueberry Compote



A lusciously thick blueberry compote bursting with whole blueberries. Perfect for serving over yogurt or pancakes for breakfast. Would also be great served over ice cream or as toppings for cakes, bakes and desserts. 

Makes 1 500ml Jar

Ingredients

225g/1/2lb Fresh Blueberries
200g Sugar
Zest and Juice of 1 Lemon
2tbsp Water

Equipment

500ml Kilner Jar

Method

Simply place the blueberries, water, lemon zest and juice in a saucepan, then slowly bring to a boil. Once you have reached boiling point, add the sugar little by little and stir until thoroughly dissolved. Bring up to a rolling boil again for 5-10 minutes until thickened.

Remove from the heat and pour into a hot sterilized jar. Seal allowing to cool at room temperature. Once opened use within 2 weeks and place in the fridge.
