Cranberries and white chocolate are a perfect match. The dried slightly sour cranberries against the creamy sweet white chocolate is heavenly. These cookies are quick and simple to make so knocking up multiple batches for parties or bake sales is a doddle. You can be as creative as you like with this recipe, by adjusting the chocolate and dried fruit to anything you desire.

Ingredients
150g Plain Flour
100g Golden Caster Sugar
75g Light Brown Sugar
125g Unsalted Butter
1/2tsp Baking Powder
1 Medium Egg
2tsp Vanilla Extract
Pinch of Sea Salt
100g Chopped White Chocolate
50g Dried Cranberries
Method
Melt the butter in a saucepan. Pop the light brown sugar and caster sugar in a mixing bowl, pour over the melted butter and beat well. Mix in the egg and vanilla extract. Sift in the plain flour, baking powder and salt then fold in to combine. Add the cranberries and white chocolate then mix in. The mixture is quite firm.
Line two baking sheets with parchment and preheat the oven to 180C.
Using a tbsp. Place even amounts of the mixture across baking sheets. Place in the oven for 10-12 minutes.
Remove from the oven. Allow to cool before transferring to a cooling rack.
