A fantastic mid-week recipe that will satisfy your taste buds. Turkish style lamb kofta, full of fresh mint and coriander and the subtle spice from cumin.
Serves 2
Makes 4 Kofta's
250g Lamb Mince
2 Shallots
1tsp Ground Cumin
1/2 Dried Chilli Flakes
1/2tsp Dried Oregano
2 Sprigs of Fresh Mint Chopped
Fresh Coriander Chopped
1 Egg Yolk
Small handful of Panko Breadcrumbs
Season with Salt & Pepper
Method
To a bowl add all of the ingredients, mix the ingredients until well incorporated. Form into dumpy sausages then wrap in clingfilm. Place in the fridge to firm up for around 30-40 minutes.
Preheat the oven to 190C.
Place in the oven for 20-30 minutes until thoroughly cooked through.
Serve on warm flatbreads with a yogurt, cucumber and mint raita. Seasonal leaves and a dollop of fiery harrisa paste.
