Pear & Walnut Salad With a Blue Cheese Dressing




As the first day of spring has arrived why not try this simple and tasty salad. With succulent juicy pears, crisp celery and crunchy walnut halves. On a bed of seasonal leaves and a light drizzle of a rich and creamy blue cheese dressing. A sure way to leave the winter blues behind and get ready for the exciting new seasonal produce on its way.
 
To a blender add 75g of soft blue cheese, 1tbsp of mayonnaise, 175ml of double cream and a pinch of salt and pepper. Blend until smooth, place to one side until needed.
Peel three pears, quarter then remove the cores. Place in a bowl and squeeze a little lemon juice over them to stop browning. Slice a couple of celery sticks.
Place the seasonal leaves on a plate, arrange the pears and celery. Scatter over the walnuts, around a handful per person. Drizzle over the blue cheese dressing and garnish with chopped celery tops.
