Caribbean Style Fruit Salad



Fruit salads are a great way to ensure you are getting your five a day. This Caribbean style fruit salad brings together the best in vitamin c rich fruits. Pineapple, mango, passion fruit and coconut are all a taste of the exotic. So why not try this fruit salad and see where it takes you.
Trim and slice the pineapple and cut into either chunks or slices. Cut down both sides of the mango leaving the stone in the middle then slice or chunk. Crack open a fresh coconut then slice thinly, or you could invest in a coconut grinder which will finely grate the coconut. Peel and segment 1 orange.
  
Arrange the fruit on a platter then slice open 2 passion fruits. Pour the seeds and pulp over the fruit. Scatter over grated coconut then grate over lime zest and squeeze over the juice.
