There is know better way to enjoy a lazy Sunday, for either breakfast or brunch. Pancakes have a long history within America diners, usually served with bacon, maple syrup and blueberries. The mixture of savour and sweet work really well together. This is a great recipe idea that works well for either thin crepes or larger pancakes sweet or savoury.
To a mixing bowl add 170g of plain flour, 2tbsps of caster sugar, 1tsp of vanilla bean paste and 1 egg. Slowly pour in 200ml of milk whilst whisking. Whisk until smooth and lump free then set to one side for around 20-30 minutes. If the batters a little thick for your liking add a splash more milk to loosen. If the batters a little thin then add a little more flour.
After the time has passed heat a large sauté/frying pan with a knob of butter in. Once the butter has melted and the pan is hot pour in the pancake mixture making the pancakes the size you require. Cook for around 1 minute a side this mixture makes around 6 medium sized pancakes.
Layer them up with sugar, lemon juice, maple syrup, fresh fruit etc. Its entirely your choice how you like your pancakes.
