Oaty Honey Bars



A delicious bar full of goodness, great for elevenses and a lunch time treat. Packed with dried fruits such as cranberries, apricots and figs. Seeds such as linseed, sunflower and pumpkin for a crunchy texture. All bound together with oats, honey and peanut butter to add body and sweetness. These will definitely keep you going throughout the day.
 
Makes 16 Bars
 
Ingredients 
 
125g Unsalted Butter
150g Light Brown Sugar
130g no-added-sugar Peanut Butter
75g Honey
Zest of 1 Orange & a Lemon
200g Porridge Oats
50g Linseeds
50g Sunflower Seeds
50g Pumpkin Seeds
50g Dried Figs
50g Dried Apricots
50g Dried Cranberries
 
Method
 
Preheat the oven to 160C then grease and line a 20cm baking tin.
 
To a saucepan add the butter, peanut butter, brown sugar, honey, orange and lemon zest. Place on a low heat and allow to melt completely. Stirring from time to time.
 
Remove from the heat then add the oats, seeds and dried fruit to the mixture and stir until thoroughly combined. Spread into the baking tin and press down to compact the mixture. Finally sprinkle with a few seeds and a drizzle of honey, then place in the oven for 25-30 minutes. Remove once slightly golden and bubbly. 
 
Allow to cool completely before cutting into bars.
