Griddled Sweet Corn Salsa



A simple salsa to accompany any Mexican feast. Griddled sweet corn that adds a slight smokey char. Against sweet cherry tomatoes sharp spring onions and zesty lime.
 
Ingredients
 
2 Husked Corn on the Cobs
10 Cherry Tomatoes
3 Spring Onions
Handful of Fresh Coriander
Pinch of Salt
Juice of Half a Lime
 
Method
 
Heat a griddle pan until smoking, place the corns on the griddle and allow to catch a little whist turning. They should take around 15-20 minutes to cook thoroughly. 
 
Meanwhile chop the tomatoes, spring onions and coriander and place in a serving bowl. Squeeze over the lime and add the salt, mix together then place to one side. 
 
Remove the corns from the griddle then slice the little yellow jewels of the cobs. Mix into the salsa and serve.
