Courgette Bread



A very simple no yeast bread recipe that takes no longer than one hour from start to finish. Containing grated courgettes to add a subtle sweetness when baked. Perfect for dipping in soups and stews. #meatfreemondays
 
Makes 1 small loaf
 
Ingredients
 
500g Grated Courgettes or Zucchini
300g Self Raising Flour
1 Egg
Pinch of Salt & Pepper
2tbsp of Milk
 
Method
 
Grate the courgettes into a large mixing bowl then add the egg, milk, salt and pepper. Beat together to thoroughly combine.
 
Preheat the oven 180C with a flat baking tray inside.
 
Meanwhile sieve in the flour and combine, you should be left with a sticky dough. If its to loose add a little more flour. Remove the baking tray then lightly flour it, place the dough on the tray and form into a dome shape. Dust with a little extra flour, place back in the oven for 50-55 minutes until golden and crusty.
 
Remove from the oven and allow to cool on a wire rack.
