Spooks Ale Cake



Serves 10-12
 
Ingredients for the sponge
 
340g Self Raising Flour
200g Caster Sugar
200g Unsalted Butter
2 Eggs
150ml Spooks Ale
1tsp Vanilla Extract
50g Dark Chocolate  
 
For the icing
 
40g Icing Sugar
100ml Sour Cream
1tsp Vanilla Bean Paste
 
Method
 
Grease and line a 23cm/9inch spring form tin. Preheat the oven to180C. 
 
In a freestanding mixer, beat the butter and sugar together until light and fluffy.
 
To a jug add the eggs and vanilla. Whisk together with a fork and then weigh and sift the flour. Add in thirds starting with the wet ingredients. Once the batter has come together add the ale and mix in. 
 
Melt the chocolate then pour into the batter, stir until mixed.
 
Spread evenly into the tin and place in the oven for 40 minutes.
 
Remove from the oven and leave to cool completely in the tin.
 
Once cooled place on a plate or cake stand.
 

Place icing sugar, sour cream and vanilla bean paste in a small jug, mix thoroughly. Spread evenly across the top of the cake, then to finish grate lemon zest all over.
