Speedy Spaghetti




Serves 2
 
Ingredients
 
140g Spaghetti or Linguine
2 Large Tomatoes
1 Red Onion
2 Garlic Cloves
1tsp Dried Oregano
1tsp Dried Chilli Flakes
2tbsp Rapeseed Oil
Handful of fresh Basil
Grating of Parmesan Cheese
Salt & Pepper
 
Method
 
Heat a pan of water adding the spaghetti and a pinch of salt.
 
Meanwhile chop the onion, garlic, tomatoes and basil. Heat the oil in a pan, add the onion and garlic then sauté until softened. Throw in the tomatoes, fresh basil, oregano, chilli flakes then season with salt and pepper. Cook until tomatoes soften.
 
Drain the cooked pasta and reserve a little liquid to add back to the pan. Add the pasta to the pan with the liquid, toss to coat the pasta and serve with a grating of parmesan and torn basil leaves.
