Ingredients for Jackets
2 Large Potatoes
100g of Pulled Pork
100g of Mature Cheddar
1tsp of BBQ Sauce
1/4tsp of Chilli Flakes
Pinch of Salt and Pepper
Knob of butter
Method
Preheat the oven to 180C.
Wrap the potatoes in tin foil and place in the oven for 1-2 hours until cooked.
Meanwhile grate the cheese and place to one side.
Remove them from the oven and tin foil. Cut in half length ways and scoop out the centres. Place the mash in a bowl and the shells on to a baking tray.
In the bowl with the mash add the pulled pork, half the cheese, chilli flakes, bbq sauce and a knob of butter. Mix until fully incorporated then season with salt and pepper.
Pack the mixture back into the shells of potato. Top with the rest of the cheese and place under a hot grill until bubbly and golden.
Serve topped with soured cream.
