Grab & Go Burrito



    
 
Serves 2

Ingredients for the filling.
 
250g Minced Beef
50g Wild Rice           
1 Onion                                                    
2 Peppers
2 Large Tomato's
3 Garlic Cloves
2tbsp Rapeseed Oil
1tbsp Vegetable Bullion   
1tbsp Smoked Paprika
2tbsp Dried Chilli Flakes
1/2tbsp Cumin
1/4tsp Cinnamon
2tbsp Dried Oregano
Fresh Coriander
300ml Water
Salt, Pepper and Sugar

Method.
 
To a blender add tomato's, garlic, 1tbsp oregano, 1tbsp oil, pinch of sugar, salt and pepper then blend into a sauce, put to one side. 
Heat a pan and add the remaining oil, dice the onion then add to the pan sauté until translucent, chop the peppers and add to the pan fry until soft. Add the mince to the pan and cook thoroughly.
Add the bullion, paprika, cumin, chilli, cinnamon and oregano. Cook until the spices start releasing their aromas then add the sauce and additional water.
Bring to a boil and simmer until the sauce has reduced and thickened.
 
In the mean time boil the rice until the water has evaporated, remove from the heat covering with a cloth and leave to steam. 
 
Once the sauce has reduced add the rice and fresh coriander mix well to incorporate.
 
Wrap into flour tortillas and serve with your choice of sides and garnishes.
