Spooky Shortbread Cookies



A fun way to get the kids involved this Halloween. These quick and simple shortbread cookies not only look spooky they taste great too. They will make a great centrepiece at any Halloween party.  
 
Makes 24 Cookies
 
Ingredients for the Shortbread
 
225g (8oz) Unsalted Butter (at room temperature)
100g (3 1/2oz) Caster Sugar
275g (10oz) Plain Flour
50g (2oz) Fine Semolina
 
Ingredients for the Icing
 
250g (9oz) Icing Sugar
Water
Various sprinkles, colourings of your choice.
 
Method
 
Line 3-4 baking trays with parchment paper and place to one side.
 
Cream the butter and sugar in a bowl until pale and fluffy. Sift and mix in the flour and semolina a little at a time.
 
Form the mixture into a dough and tip out onto a floured surface. Knead the dough until smooth in consistency then wrap in cling film and place in the fridge for 30 minutes to chill.
 
Roll the dough out on a floured surface to around 5mm thick. Cut with the cookie cutters and repeat the process until all of the dough has been used. Place the shapes onto the baking trays and chill again for 15 minutes.
 
Preheat the oven to 150C/300F.
 
Bake the shortbread cookies for15-20 minutes or until light browned. Remove from the oven and allow to cool completely before decorating.
 
Sift the icing sugar into a bowl, add the water a drop at a time until you reach a spreadable thick paste. This can be divided into lots of other bowls where you can add different colours to make them your own.
