A Moroccan inspired sharing board using chicken thighs baked with spices, garlic and preserved lemons. All served with warmed pittas, hummus and a wicked carrot salad.

Ingredients
4 Chicken Thighs
1tbsp of Oil
1tsp Smoked Paprika
1tsp Ground Cumin
1tsp Chilli Flakes
1/4tsp Ground Cinnamon
Sprig of Thyme
1 Bulb of Garlic
1/2 a Preserved Lemon
Method
Preheat the oven to 200c.
Place the chicken in a ovenproof dish along with the oil and spices. Rub the spice mix onto the thighs with a pinch of salt and pepper. Chop the bulb of garlic in half then add to the dish along with the chopped preserved lemon.
Place in the oven for 45-50 minutes turning occasionally. Remove once cooked through thoroughly, Pull the thigh meat and discard the bones.
Serve on a board along with warmed pittas, yogurt, hummus and a lovely carrot salad.
