Macerated Strawberries



A great little way to liven up strawberries is to macerate them. The sugar added to the strawberries extracts and draws out the moisture. The sugar turns into a simple syrup which can be used over scones in place of jam or over ice cream and even yogurt.
 
Simply slice 300g of strawberries. Place in a bowl and sprinkle over 1tbsp of caster sugar. Add a 1/4tsp of vanilla bean paste or extract. Stir to combine then cover and set aside for around 10-20 minutes. Until the juices have been extracted and a syrup has formed. 
Use within 2 days and refrigerate.
