A simple salad idea which works really well with the Moroccan spiced chicken. Grated carrot with toasted cumin seeds, all bought together with freshly squeezed orange juice. Topped with yogurt and fresh coriander.
Ingredients
2 Medium Sized Carrots
1 Orange
1-2tsp of Cumin Seeds
Method
Toast the cumin seeds in a pan between 30 seconds to a minute until they start to realise their oils. Remove from the heat and allow to cool.
Grate the carrots into a serving bowl then squeeze over the orange juice. Add the cumin seeds and stir through.
Serve topped with yogurt and fresh coriander.
