Moroccan Salad



A little taste of the Middle East to liven up your dinner table at meal times. It is quick and simply delicious. If you're looking for a nutritious way to keep up with a new years resolution, then I am sure this will help. A lovely combination of crunchy pine nuts and soft sweet dried apricots, with a punch of fragrance from fresh coriander. The star being the ruby red jewels of pomegranate that pop with each mouthful.   

Serves 2 or as side salad
Ingredients
75g Couscous
30g Pine Nuts
6-8 Dried Apricots (preferably unsulphured)
1/2 Fresh Chilli
1/4tsp Ground Cumin
Fresh Coriander
Handful of Pomegranate jewels
Small pinch of Saffron Stamens
100ml Boiling Water 
Method
Place the couscous in a bowl, adding the saffron, cumin and pour over the boiling water. Cover with a tea towel and place to one side. The couscous will take around 5-8 minutes to puff up.
Meanwhile chop the apricots, coriander and chilli. Once the couscous is ready add the apricots, pine nuts and chilli then mix together. Place the couscous on a big plate, then scatter over the coriander and pomegranate jewels.
Serve as a side salad with fresh salad leaves, or enjoy as a light lunch.
