Caramelised Pineapple & Chocolate Sauce

Ingredients for the Pineapple
1 Medium Pineapple
50g Light Brown Sugar
50g Unsalted Butter
1/4tsp Ground Cinnamon
Ingredients for the Chocolate Sauce
100g Milk Chocolate
50ml Double Cream
Knob of Unsalted Butter
1/2 Vanilla Extract 
Method
Trim and core the pineapple, then cut into chunky strips and place to one side.
Heat the butter, ground cinnamon and light brown sugar in a sauté pan until it starts to become sticky and bubbly, reduce the heat slightly to avoid burning the mixture. Add the pineapple strips, using tongs turn the pineapple to coat thoroughly. 
Meanwhile to a double boiler add cream, butter, vanilla extract and chocolate. Leave until the chocolate has melted then stir together to mix. Add to a warmed ramekins.
Once the pineapple has warmed through serve.
