Ingredients
4 Chicken Thighs
1 Onion
1 Pepper
3 Garlic Cloves
1 Chilli
8-10 Cherry Tomatoes
2tsp of Cumin
2tsp of Smoked Paprika
1/4tsp Cinnamon
1tsp Dried Chilli
2tsp Dried Oregano
1tbsp Oil
Fresh Coriander
Method
Bone the thighs and cut into strips. Chop the pepper and onion then place to one side.
Meanwhile quarter the cherry tomato's and roughly chop the garlic. Place in a blender with a pinch of salt and sugar then whizz into a sauce. Leave to one side.
Heat the oil in a frying pan. Add the chicken, pepper and onions, cook until the chicken is 3/4 of the way cooked. Add the spices and fresh coriander then cook for a further 5 minutes, pour in the prepared sauce and cook until it has reduced by 2/3.
Serve with either flour or corn tortillas and your choice of sides and toppers.
