Dim Sum Style Pork Dumplins



These dim sum style buns are packed with sweet chilli and hoisin coated pork, along with spring onions and fragrant coriander. A simple Chinese style recipe that lends itself to sharing boards and is best served with a variety of dipping sauces.
 
Makes 8 Buns
 
Ingredients for the Dough
 
250g Plain Flour plus a little extra
200ml Milk
1/2tsp Baking Powder
Pinch of Sea Salt
 
Ingredients for the filling
 
250g Pork Mince
2 Spring Onions
1 Fresh Chilli
Handful of Fresh Coriander
3tbsp Sweet Chilli Sauce
3tbsp Hoisin Sauce
1tbsp Sesame Oil
2tsp Fish Sauce (Nampla)
2tsp Soy Sauce
Freshly Cracked Black Pepper
 
Method
 
Finely chop the spring onions, chilli and coriander.  Heat the sesame oil in a wok, then add the pork mince and sauté until cooked through. Add the chopped ingredients along with the sweet chilli, hoisin, pepper, fish and soy sauce. Warm through mixing thoroughly, remove from the heat and allow to cool completely.
 
Meanwhile make the dough, sift the flour and baking powder together.  Add the milk and pinch of salt then mix to a dough. It should be slightly moist but if its a little wet add more flour. Divide into eight and shape them into balls. Press your thumb into the middle, then fill with a table spoon of the meaty mixture. Fold the dough over the hole and place the dumpling into a muffin case continue until all eight are done.
 
Place the dumplings in a bamboo steamer over a hot pan of boiling water. Allow to steam for around 12-15 minutes. Remove from the heat then serve sprinkled with sesame seeds and a variety of dipping sauces.
