Oreo Cheesecake



Sevres 10-12

Ingredients

300g Digestive Biscuits
150g Melted Butter
360g Cream Cheese
1tsp Vanilla Bean Paste
110g Caster Sugar
100g White Chocolate Melted
150g Oreo's
50g Dark Chocolate Melted
Punnet of Raspberries

Method

Grease and line a 9inch loose bottom baking tin.

Bash the digestive's until they look like bread crumbs.

Meanwhile melt the butter in pan. Once melted pour over the biscuit then stir till coated.
Press into the baking tin so you have a base and sides, then chill in the fridge until set.

Beat the cream cheese, sugar and caster sugar in a freestanding mixer until smooth. Add the melted white chocolate and vanilla bean paste and mix throughout.

Chop the Oreos into quarters and stir into the cream cheese mix. Removed the chilled base from the tin. Fill the base with the Oreo cream cheese mix and smooth out.

Top with a tower of raspberries, followed by swirling the melted dark chocolate over the top.




Dust with a tiny bit of icing sugar over the raspberries.
