French Onion Soup



Serves 2-4
Ingredients
500g Onions (you could use a mix of onions too)
1 Medium sized Carrot
1 Stick of Celery
3 Garlic Cloves
500ml Of Stock
200ml Red Wine
1/4tsp Oregano
1/4tsp Sage
1/4tsp Rosemary
Pepper
2 Bay Leaves
1tbsp Rapeseed Oil
Knob of Butter
Method
Heat the oil and a knob of butter in a saucepan.
Meanwhile chop the onions, garlic, carrot and celery. Add them to the saucepan, sauté until the vegetables have softened. Add the wine, bay leaves, herbs and pepper then bring to the boil. Reduce the liquid by half, then add the stock bring to the boil again then reduce by a third.


Serve with crusty bread.
